Delicious Noms



I said I would post if I made anything delicious!  It just so happens I did. It was an arugula and blackeye pea salad.  The recipe is below.


Ingredients:
Blackeye peas
Arugula
Grape tomatoes
Cheese (your choice, I used mozzarella, but I think feta would work better)
Thyme, dried
Balsamic vinegar
Olive Oil

1. Soak and prepare the black eyed peas according to package instructions (I soaked for about 4-5 hours, rinsed them, then cooked them for about 45 minutes until they tasted done).  Don't be afraid to take a bean out occasionally and try one. Once beans are cooked put them in the refrigerator to cool.

2. Put arugula in a bowl.  Add the peas.  Slice the grape tomatoes in half and toss them on top of the salad.  Sprinkle on cheese, then sprinkle on the thyme.

3. Drizzle on vinegar, followed by the oil. Eat. Enjoy.

It tastes so good you'll be this happy!
